Famous Horse Collar returns to Lambeau Field, joining new menu items

Among the most indulgent and talked about items on any Lambeau Field menu, the Horse Collar was "retired" in 2016, but 10 years later it's making a comeback. The Horse Collar is a large, horseshoe shaped kielbasa sausage topped with beer cheese sauce, beer mustard and sauerkraut on a horseshoe-shaped Kaiser bun.

It's one of 15 items added to the Lambeau menu for this season. Others include onion trio burgers, fried brownie bites, Bratzilla grilled cheese, chocolate chip cookie cups served with gelato, fried pickles and more.

"The Horse Collar is a very shareable item," said Zac Ladubec, Delaware North's executive chef at Lambeau Field. "It's that big, fun item we get to talk about."

Delaware North Sportservice is the concessionaire and food service provider at Lambeau Field.

The Delaware North folks gather at the end of the season to decide what worked, what didn't and what might be good to add the next season. Testers are readily at hand. "We walk around the building and force people to eat," Ladubec said.

They also had additional test audiences this year, including two Luke Combs concerts and the Notre Dame/Wisconsin football game, where giant pretzels were a big hit.

Items can be hit and miss – "Nothing here was nailed on the first try," Ladubec said – and whatever they come up with has to be edible with or without gloves. "The challenge is coming up with menu items that work in August and still work in December," he said.

"We try to push farther out every year," said Ladubec, entering his 12th year at Lambeau and sixth year as executive chef.

Here then are the new items at Lambeau and seating sections where they can be bought. Abbreviations mean: I for Inner Concourse; O for outer concourse; P for portable concessions; M for marketplace concessions and U for upper concourse. The first list is concessions areas accessible to fans in the bowl, the premium list is for club seat levels.

Return to the Horse Collar – Johnsonville kielbasa sausage topped with beer cheese sauce, beer mustard and sauerkraut on a horseshoe Kaiser bun. Available at 105M, 133M, 340M and 486.

Double (or Triple) Onion Burger – A double or triple burger topped with bourbon bacon onions, French onion dip, crispy fried onions and pepper jack cheese on a brioche bun. Available at P111.

Fried Brownie Bites – Brownie bites served with chocolate sauce and whipped cream. Available at P347.

Fried Cookie Dough – Cookie dough served with chocolate sauce and whipped cream. Available at P347.

Fried Pickles – Crispy fried pickles served with ranch dressing. Available at 106M, 134M, 305M, 340M, 427, 635-O and Johnsonville Tailgate Village.

Pack N Cheese Sloppy Joe – Macaroni and cheese topped with sloppy joe and pickled red onions. Available at P101, 312M, 331M, 435-O and 743-I.

Pickle Crunch Brat – A Johnsonville brat topped with pickle de gallo and crispy fried onions on a brat bun. Available at 472 and Johnsonville Tailgate Village.

Bratzilla Grilled Cheese – Sourdough bread with garlic aioli, Havarti cheese, cheddar cheese spread and bratwurst, served with chips. Available at 124-O and 326M.

Chicken Bacon Ranch Sub – Pulled chicken, bacon, Swiss cheese and ranch on a sub bun. Available at 305.

Big Cookie – A half-pound chocolate chip cookie at 247P.

Chicken Ciabatta Sandwich – Grilled chicken, arugula, bacon, ranch aioli, white cheddar on a ciabatta roll at 305.

A new signature cocktail made with lime juice, orange juice, agave nectar and Tito's Handmade Vodka will be available at 100-B, 117-I, 122-I, 131-O, 315, 354-B, 642-O, 680, 684, Long Bar and Elevator Bar.

Banh Mi Sandwich – Marinated sirloin filet topped with apple-carrot kimchi, miso aioli, sliced cucumber and an arugula-cilantro mix, served on a hoagie roll. Available at 427M.

Onion Trio Burger – A double burger topped with bourbon bacon onions, French onion dip, crispy fried onions and pepper jack cheese on a brioche bun. Available at 472.

Cookie Cup – A chocolate chip cookie cup served with choice of Sara's Artisan Gelato. Available at 427M.

Fried Brownie Bites – Brownie bites served with chocolate sauce and whipped cream. Available at 427M.

Noodle Bowl – Soy-marinated chicken with mixed vegetables and lo mein noodles, served with choice of Korean BBQ, sweet teriyaki or Mae Ploy sauce. Available at 427M.

Chocolate Peanut Butter Pudding Cup – Chocolate pudding layered with peanut butter mousse, crunchy peanut butter, crushed peanut butter cups and whipped cream. Available at P484 and 427M.

Bananas and Cream Pudding Cup – Banana pudding with whipped cream, bananas and Nilla wafers. Available at P484 and 427M.

Chicken Bacon Ranch Sandwich – Roasted chicken, white cheddar, bacon, arugula and garlic ranch aioli on ciabatta bread. Available at P688.

Wrap of the Game – A turkey club wrap featuring turkey, sliced gouda, chive mayo, beer mustard, romaine, sliced tomato and bacon. Available at 690.

Big Cookie – A half-pound chocolate chip cookie at 427.

Jumbo Pretzel – Jumbo pretzel topped with butter and kosher salt, served with Horse Collar cheese and beer mustard at 674, 486, 4E, 478, 678 and in seats.

Chicken Ciabatta Sandwich – Grilled chicken, arugula, bacon, ranch aioli, white cheddar on a ciabatta roll at 688.

Steak Sandwich – Tenderloin, whole grain mustard aioli, arugula, sliced mushroom and onion, white cheddar on Ciabatta hero bun at 688 and 413P.
